Looking ahead is the St. Augustine Celtic Music and Arts Festival will be here March 11th - 17th. Some of the greatest living musicians, artists, writers and poets from Ireland, the US and the Celtic region of Spain, will converge in this wonderfully romantic city for a weeklong celebration to honor the great traditions of music, literature, dance and all things Celtic. Chocolate covered strawberries are quite appropriate for this month and these are both delicious and make a beautiful presentation.

Chocolate Covered Strawberries

Start with a little less than a cup of milk chocolate (for about 10 strawberries) and melt it in a double boiler over the stove in order to avoid scorching the chocolate (a microwave can also be used).  Add a touch of coffee liqueur in order to achieve a consistency that is not too thick, but not runny.  Be sure the Strawberries are bone dry and roll them through the chocolate and place on small cookie sheet lined with wax paper.  Place the tray in the refrigerator to cool.  You may also decorate the strawberries with melted white chocolate.

Cleaning tip:  Fresh chocolate on clothing.  Scrape as much of the chocolate off the garment with a spoon and....  Rinse the back of the stain with cold water.  Rub a liquid enzyme detergent into the stain and soak for 30 minutes.
