Happenings at the Inn

 

The 2011 Florida Birding and Photo Fest is one the most beautiful and most celebrated festivals in the state.  Nature photographers from all over the world travel to St. Augustine for this special event.  The 2011 festival features more renowned international photographers, more new rare birding opportunities, and even more new in-field training and technical programs.  The Raptor Project is one of the newest programs and will feature more than 20 different native and exotic species.

Recipes and Tips

New Cookbook Request:  We are gaining momentum on recipes, but we need more as we put together the second cookbook that features the best family recipes from our guests here at the Carriage Way.  The cookbook will have one recipe on a page and we would like you to provide a short story that complements the recipe.  Send us only your best and if we print your recipe, we will send you a complimentary copy. Jeanie says that these cookies are meant to be a little crunchy on the edges and soft in the center.

Coconut Crunch Cookies:

1 cup butter, softened

3/4 cup sugar

3/4 cup packed brown sugar

2 eggs

2 tsps vanilla extract

1 tsp almond extract

2 cups all-purpose flour

1 tsp baking soda

3/4 tsp salt

2 cups grated coconut

1 package (11-1/2 oz) milk chocolate chips

1-1/2 cups finely chopped almonds

In a large mixing bowl, cream butter and sugars until light and fluffy.  Beat in eggs and extracts.  Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well.  Stir in the coconut, chocolate chips and almonds.  Drop by rounded teaspoonfuls 2 in. apart onto ungreased baking sheets.  Bake at 375 degrees for 9-11 minutes or until lightly browned.  Cool for 1 minute before removing from pans to wire racks.  Makes about 4-1/2 dozen.

 

Cleaning tip:  Clean windows with a solution of 2 cups water, 1/4 cup white vinegar and 1/2 tsp liquid soap.  Wash windows in the shade to avoid streaking.

Next time you are staying in St Augustine, visit the The Hyppo for a gourmet popsicle.  We personally like the Coconut Coconut, but they usually have a couple dozen different flavors like:  Key Lime, Pineapple Cilantro, Cucumber Lemon Mint, Datil Strawberry, and Elvis Presley with bananas, peanut butter and honey.
