Happenings at the Inn in May

Attend one of golf's greatest events The Players Championship.  The event is held on the Stadium Course at Sawgrass, which is just a 30 minute drive North of the historic district of St. Augustine.  Practice rounds begin on May 7th and the tournament is May 10th - 13th.

Recipes and Tips

New Cookbook Request:  We have more than three dozen new recipes from travelers from all over the world, but we still need yours as we put together the second cookbook that features the best family recipes from our wonderful guests here at the Carriage Way.  The cookbook will have one recipe on a page and we request that you provide a short story that complements the recipe.  Send us only your best and if we print your recipe, we will send you a complimentary copy.

In May, we are celebrating Cinco de Mayo and Romanza Week.  To help celebrate try this spicy corn relish appetizer

Corn Relish Dip

1/4 cup of Extra Virgin Olive Oil

Juice of 1 lime

1 T. minced fresh cilantro

3 tomatoes seeded, diced

1-1/2 cups frozen corn kernels, thawed

2 jalapenos, seeded and diced

Salt and pepper

In a large bowl, combine the oil, lime juice and cilantro.  Mix in tomatoes and corn.  Add jalapenos to taste.  Season with salt and pepper.  Use as a dip, or add as a topping to tacos, fajitas, and burritos.

Cleaning tip: Reuse your nylon bath scrubs in the kitchen to clean counters, scrub sinks, and even clean delicate pieces.  Keep a lint roller in your car for quick dusting of the interior.
